Leftover Pulled Pork Tacos

Ingredients

Instructions

  1. Heat 1 tablespoon bacon grease or oil in a 10-inch cast-iron skillet over medium-high heat.
  2. Once heated, arrange shredded pork in an even layer in the pan and cook, uncovered, for 4-5 minutes.
  3. Using tongs, flip the pork. It should appear golden brown and crispy. Continue cooking for another 3-4 minutes.
  4. Remove from heat and serve hot in tortillas with desired toppings.

Notes

The key is treating the leftover pork like carnitas — cooking it carnitas-style in a hot pan produces irresistible crispy bits.

If your leftover pulled pork is already coated in sauce, skip the high-heat caramelizing step as sugars may burn. Instead, reheat covered over medium-low.

Topping ideas: guacamole, pico de gallo, salsa, sour cream, shredded cabbage, pickled jalapenos.
